Mini quiches
Ingredients
175 g plain flour
pinch of salt
85 g butter
2-3 tbsp cold water to mix
2 rashers of bacon, chopped into small pieces
2 eggs, beaten
60 g grated Cheddar cheese
150 ml milk
salt and freshly ground pepper

Method
Preheat the oven to 200 C / Gas 6.Sieve the flour and salt into the bowl. Add the butter and rub it into the flour. It should look like breadcrumbs
.Sprinle on the water and stir the mixture with a knife to make it come together. Press the pastry into a ball.
On a lightly floured surface flatten the pastry with your hand. Then roll out to form a rough circle abourt 3mm thick.
Cut out the pastry and place in the bun tin.
