Cooking 4 fun: Easter Carrot Cake

A yummy carrot cake with cream cheese frosting


Ingredients: 
225g carrots, peeled, 225g soft brown sugar, 225g flour, 2 tsp baking powder, 2-3 tsp cinnamon, zest 1 orange (optional), 4 eggs, 225ml sunflower oil.


Method

Grate the carrots, then tip them into a large bowl.Sift the sugar, flour, baking powder and cinnamon on top of the carrot  and mix everything around a bit. Break the eggs into a bowl, then add them to the bowl along with the oil. Mix everything together. Put it in the oven for 30 minutes or until the cake is cooked. 



For the icing

  • 60g softened butter
  • 60g icing sugar
  • 170g soft cheese (Philadelphia)



To make the icing, mix the butter and icing sugar together, then stir in the soft cheese until smooth. 




When the cake is cool, spread the top with the icing.

And here you are, delicious carrot cake!





It's the perfect recipe for Easter.
