Cooking 4 Fun: Carrot & cream cheese cupcakes

Delicious cupcakes


Ingredients

225g Flour
225g Light brown sugar
2 teasp Baking powder
2-3 teasp Cinnamon
4 Eggs
225g Sunflower oil
225g Grated carrot
170g Chopped mixed nuts





METHOD

Heat oven to 170c.

Beat eggs and sugar together, add oil and flour and beat well.





















Then, add cinnamon, baking powder and carrot (this will go runny)

Divide the mixture between cases and bake for 20-22 mins until a skewer poked in comes out clean. 



      Cool on a wire rack before icing.



Icing

170g Philadelphia cheese
60g Icing sugar
60g Butter                  sugar/butter approx. or to taste

Beat ingredients together



Use a palette or cutlery knife to swirl the icing on top of the cakes, then sprinkle with decorations.
